Who we are
Amanda has worked in the restaurant industry for years and realized that the food she makes every day at home is better than anything she serves. Chuck served in the U.S. Army for 21 years and never wanted to follow orders again. So we decided to open a food truck and share what makes our family awesome with everyone else (well, if they are willing to pay for it. Food isn't free).
What inspires us
Have you been to a Mexican restaurant or taco truck and just want some damn tacos? But all they have are unique tacos with a cucumber aioli, apple and chicken fusion, or some other weird ass so-called "Mexican food." We did, too! Then we realized that the best food is made at home. It's simple, brings us together as a family, and doesn't need anything weird added for everyone who eats it to love it. Well, at Los Bailey's, you will only get simple Mexican food, which is perfect the way it is. If our food doesn't remind you of your abuelita's cooking, we're sorry about your sad childhood. That is why we're here!
